Onion soup with roquefort croutons

Ingredients

400 g of onions
1 tablespoon of butter
20 g of white flour
1.5 dl of white or rosé wine
1 liter of vegetable broth
salt
2 sprigs of thyme
Roquefort crostini

40 g of soft butter
60 g of roquefort
black pepper from the pepper mill

How to proceed
Halve the onions and cut them into thin strips. Sauté them in a large pan in the butter for approx. 5 minutes. Sprinkle with flour and fry briefly. Add the wine. Add the broth and season the soup with salt. Add half of the thyme. Cover and let the soup simmer for 30 minutes.
Slice the baguette. Mix the butter with the roquefort.
Just before serving, heat the oven to 200 ° C. Spread the slices of bread with the mix of roquefort and butter. Arrange the bread on a baking sheet lined with baking paper. Gratin in the center of the oven for 3-4 minutes. Serve the soup on plates. Garnish with the remaining thyme and serve with the croutons sprinkled with pepper.
